Cooking with the Gucci Osteria Chefs: Karime López Makes Egg Dish Khachapuri

And to make it even easier, we list and explain everything in writing. Take a pen and paper to write it down!

Khachapuri , Georgian bread and cheese, by Karime Lopez

Ingredients:
- 300g of flour
- 2g of salt
- 2g of sugar
- 4g of dry yeast
- 80 ml of warm milk
- 100 ml of warm water
- 300g of grated cheese (feta cheese, mozzarella and parmesan) ' you can use any cheese, I used it because it was what was in the fridge '' comments the chef.
- 20 ml of milk
- 3 eggs

Preparation mode:
Mix the milk and water and add them with a little yeast. Add sugar and, in another bowl, mix the flour with the salt. Put everything together until you get a homogeneous mass, then let it rest for 2 hours. Grate the cheese and mix it with 100 ml of milk + an egg; Take the dough by spreading it out in a circle about 9 inches in diameter. Then, roll 2 opposite sides of the circle towards the center so that it has a boat shape. Join the corners, cover and let stand for 1 hour. Fill the kachapuri with the cheese mixture. Place in the oven and bake at 180 ° C. When it is golden in color (after about 15 minutes), remove it and place the egg in the middle. Put it back in the oven until the egg is cooked (after 5-6 minutes) and enjoy!

Karime Lopez, from Mexico City, is the only female chef awarded a Michelin star in Italy in 2019 - and the only Mexican chef ever awarded in this category.
